Cédric Mousse Les Fortes Terres is a sparkling wine made by Cedric Mousse from the Pinot Meunier variety in Cuisles, Vallée de la Marne, Champagne, France, within the Trésors de Champagne Club, therefore it is a Spécial Club.
This cuvée was born in 2005, already when the winery was in the hands of Cédric. It was the first Spécial Club made 100% from Pinot Meunier and a small revolution for all those who thought of this variety as a minor one.
It is made with four plots of Cuisles, from the lieu dit Les Fortes Terres, characterized by an upper layer of fertile soil of barely 20 centimeters, under which there is a layer of 40 centimeters of sand, 30 centimeters of illites and, lastly, the limestone bedrock.
The wine performs malolactic, is filtered very lightly and is not clarified. After the second fermentation in the bottle, the wine has a dosage of 0.5 grams per liter.
