Don Zoilo Palo Cortado is a wine made by Paola Medina with the Palomino variety at the Jerezana Williams & Humbert winery. First bud musts from the Añina and Carrascal estates, cold static decantation and fermentation at 22ºC, early settling, classification by fineness, fortification at 15º with the best wine distillates to obtain the traditional sobretablas, transition to the Criaderas and Solera de the solerajes of fine wines in biological aging, due to circumstances and punctually, butts appear that do not go in the desired direction for the intended fine wine, these are the ones that will be cut with one or two jugs of alcohol and will form the base of the soleraje of Palo Cortado, remaining in this one at least 12 years until reaching the hearth. 140 years contemplate the history of Williams & Humbert, owned by the Medina family, Paola Medina is the visible head of the elaborations and the one who has placed the wines of the winery at high levels of quality within the Marco de Jerez. A specialist in static aging and vintage wines, Paola leads the Sherry Revolution, which along with other young winemakers and oenologists from the area, have breathed an air of modernity into the denomination.
