"Only the best oxidative wines are classified as Palo Cortado, and that usually happens only after long aging, as is the case with the rare 1991 Vintage Palo Cortado, a rarity because it does not come from a blend of solera vintages, but from single harvest. The evolution is accelerated by not having younger wines mixed, and the aged Sherry wines tend to feel older than the corresponding solera wines. It was interesting to taste it together with Cuatro Palmas, a very old Amontillado, older on average than this wine, darker, with more oxidation, and could have ensured that they would be more or less the same age. The vintage had spicy aromas, much more aromatic and expressive, and had a soft touch that the avant-garde Amontillado did not show. I found the palate intense and the flavors refused to fade from my mouth after I had swallowed it. These are timeless wines that can be preserved forever, even after opening the bottle. Wonderful! Only 992 beautiful bottles, which reproduce the old bottle and are sealed with thick red wax, will be filled in April 2019, but the wine is not going to change after 27 years in the barrel."
