The Fondillon is a generous wine without heading, made with the Monastrell variety and exclusive to the province of Alicante. It came with years of history that was about to disappear in the middle of the 20th century due to the demographic and tourist explosion that the city of Alicante suffered.
The Fondillon is a generous wine without heading, made with the Monastrell variety and exclusive to the province of Alicante. It came with years of history that was about to disappear in the middle of the 20th century due to the demographic and tourist explosion that the city of Alicante suffered. Its elaboration begins with the overripening of the grape on the vine, to later proceed to a raisin of at least a couple of weeks. It is vinified and aged in Oak Stomping Boots with a capacity of about 1500 liters for long periods of time, between 20 and 25 years before going on the market.
