Finca Escolinas is a hillside with a steep slope and excellent exposure, cultivated on terraces on the banks of the River Narcea that gives it a moderating influence on temperature. The soils are gravel and are cultivated with organic fertilization, very low plant loads and manual harvest. Escolinas Rosado is made with this magnificent Albarín Negro grape that in the Dao they call Alfrocheiro Preto, in Galicia they call Caíño and in the Canary Islands they call Baboso. It is acclimatized to Cangas from the 11th century when the Benedictines brought it with them. Perfectly adapted to northern climates such as Cangas de Narcea. The harvest is manual, the bunches are selected on a table, they are destemmed without crushing and only the flower must is used. Only 500 liters are made in a tank that ferment spontaneously. The malolactic is interrupted to maintain freshness and to maintain color and tension in the mouth. We are facing a really unique rosé.
