San Cobate presents its estate wine: San Cucufate Monasterio. It comes from a plot of just 1.6 hectares planted more than eight hundred and sixty meters in Gumiel del Mercado in the province of Burgos. It is a special estate, in which there is a diversity of plantations, including oaks and all kinds of vegetation adapted to very-very poor soil with a strongly calcareous component. The wine is a single varietal of Tinto Fino that lives up to its name. Because the wine is very fine. It shows a perfect adaptation of the variety to the terroir and reminds us both on the nose and in the mouth of those great Riberas del Duero that brought the name to fame. A classic wine without any excess neither in the vineyard nor in the elaboration (fermentation in cement with whole cluster, aging in used barrels and large cask), where everything is in its place and the set is harmonious, elegant and above all very fine.
