Quite is the second ROC wine, made from old Mencía vines from different parcels of Valtuille de Abajo, with a short aging of nine months in French oak barrels to maintain the freshness of the fruit.
To understand what ROC is, we have to explain who Verónica Ortega is: a Jerez woman who has worked at Clos Erasmus, Álvaro Palacios, Comte Armand, Domaine de la Romanée Conti, Domaine Combier or Niepoort, and who in 2010 came to Bierzo to elaborate a great wine of mencía. He cultivates two very old vineyards, over 80 years old in Valtuille de Abajo, following an organic cultivation. The farms are of sandy-clay soils, with a multitude of different minerals but a strong sandy component that gives an aromatic finesse and a more precise size in the mouth, as a counterpoint to the muscular touch of the clay soils.
