Sierra Cantabria CVC
Viñedos Sierra Cantabria
This CVC is the work of many years of exploring an old vineyard, after which they found one of 1.4 hectares and exposed to the north, to add the extra freshness and acidity necessary for a long life, in San Pelayo (San Vicente de la Sonsierra). After choosing the healthy grape with all the rigor of manual harvesting, it matures with skins, between 25 to 31 days. The malolactic fermentation and aging takes place in new French oak barrels. At the end of 2016 they already had 11 vintages in the barrel aging process and, after a long process of tastings and tests, they realized that 2008, 2009 and 2010 were excellent for aging and also for enjoyment. The result of the assembly of these three vintages, with an individual aging of 70 months, is a unique wine of great purity and complexity, as delicious as it is unforgettable.
