Nature and progress, this is how Ismael Gozalo, vigneron of the MicroBIO Wines winery located in Nieva, Segovia, describes his project. They are based on ancestral techniques and organic agriculture to make lively and respectful wines like this Sietejuntos Arróyelos, a single varietal from Tempranillo. Maceration from 12 to 14 days, alcoholic fermentation with native yeasts in stainless steel tanks and aging for 9 to 10 months in 228-liter oak barrels. Structured wine, particular, few bottles in the world but of quality, of guaranteed enjoyment.
