The Clos St. Jean is the estate that surrounds the house (and former cellar) and the current winemaking and breeding area. It is an estate where Pinot Noir strains coexist with Chardonnay strains and that the winery considers THE ESTATE. A Pinot Noir to discover. The origins of Domaine Paul Pillot date back to the second half of the 19th century, when Jean Baptiste Pillot combines his work as a cooper with that of winemaker. Today, in the 21st century, it is Thierry, great-grandson of Jean Baptiste, who takes the reins of the Domaine that bears the name of Paul Pillot, his father. Thierry, thirty years old, is helped by his little sister Chrystelle. Paul Pillot's style is that of absolute respect for the grape, which in his wines is never masked by wood (ironic if we think that the origin of the winery is that of a cooper). The wines are aged in French oak barrels, a percentage of which is new and ranges from 20 or 25% of the simplest wines to a maximum of 50% for Premier Cru in the largest vintages.
