The Santo Stefano vineyard in Monforte d'Alba consists mainly of red clay and sand, in addition to some of the famous white clays that are impregnated with metals and minerals. Including limestone, the best conditions for viticulture. Fermentation in cement, bad and aging in steel, without contact with wood. Incredibly focused, pushing and shoving, extreme straight-line stability. Very concentrated red fruit, properly structured in the nose and mouth, wild strawberries, concentrated black and red cherries, sour cherries and plums, including very delicate milk chocolate and marzipan, some nougat, orange zest. Long, salty and mineral aftertaste with great freshness. Licorice, a little bit of tar and eucalyptus in the red berry Dolcetto? A dolcetto with tannins, roughness, a Dolcetto with size? You rarely have something like that in your glass.
