Cerasuolo de Vittoria is the wine that put COS on the map. The sensuality of Frappato and the spices of Nero d'Avola. In special years, COS bottles Delle Fontane, with a selection of vines over 20 years old, with clay-calcareous soils at about 200 meters of altitude.
To the East of Acate, just 500 meters from the Azienda Agricola Cos, is where the vineyard with which Vittoria delle Fontane's Cerasuolo is made is located. Planted 30 years ago on a vineyard sloping to the East, with a very fine surface and a very pure white limestone subsoil. That is why the wines from this vineyard have always been very vertical, more austere, less tannic and in 2010 Giusto and Titta decided to make a separate vinification: their first single vineyard Cerasuolo di Vittoria Classico. It is still 40% Frappato and 60% Nero d'Avola. It ferments in cement with 20 or 25 days of contact with the skins, then it is pressed and passed into large Slavonian oak barrels where it refines for two years, followed by time in amphora (between six months and one year) until bottling . After bottling, the wine is still left to refine in the bottle. This is one of the wines, along with Contrada, that Azienda Agricola Cos tries to put on the market as late as possible, to show how well Vittoria's wines can age
