The Carrasquín with which this Escolinas Carrasquín is made is a variety that the Benedictines brought with them in the 11th century to Cangas, when they settled in the Corias Monastery. Late maturing variety, its resistant skin makes it ideal for cultivation in the north of Asturias. And it gives tannin and acidity to the wines.
Finca Escolinas is a hillside with a steep slope and excellent exposure, cultivated on terraces on the banks of the River Narcea that gives it a moderating influence on temperature. The soils are gravel and are cultivated with organic fertilization, very low plant loads and manual harvest. The Carrasquín with which this Escolinas Carrasquín is made is a variety that the Benedictines brought with them in the 11th century to Cangas, when they settled in the Corias Monastery. Late maturing variety, its resistant skin makes it ideal for cultivation in the north of Asturias. And it gives tannin and acidity to the wines. The wine comes from a vineyard selection with a southeastern exposure. It is made in 5000-liter tanks with wild yeasts, and is aged in used French oak barrels and later refined in the bottle.
