La Trousseau is one of the Jura grapes, synonymy of the Bastardo that is giving us so many pleasant surprises in Galicia. This monovarietal comes from the Les Gauthières estate, which has a soil of marnas, but provides a differential fact: it is the production of a mass selection called "Trousseau a la Dame". Apart from the certified biodynamic viticulture that is the norm in Domaine Pignier, this wine is harvested manually, with selection in the vineyard, destemming, a one-month vat followed by natural fermentation with indigenous yeasts and a subsequent aging of 12 months in barrels of Oak. Sulfur is not added, it is not filtered and fruit is bottled on a daily basis. Cherries and spices.
