Description

To understand what San Cobate is, you have to go to Burgos. There, in Gumiel del Mercado, there are four areas located between 830 and 910 meters of altitude. The four zones have slightly different soils, from clayey-calcareous to limestone-stony, with different orientations, which allows San Cobate to make a wine that is not only very complete but also of great finesse.

It is harvested manually in boxes of 15 kilos, bunches are selected before destemming and fermented in cement. The aging is in used barrels and wooden vats so as not to mask a very high quality fruit like the one from 2018.
