This organic wine recaptures the original, yet often forgotten, essence of a region steeped in centuries of uninterrupted winemaking tradition, its origins lost in the mists of time. Established in 1970 on the southern slopes of the Serra d'Ossa mountain range, the vineyard is unique not only for its privileged location but also for its winemaking history, which stretches back to the medieval period. It is here that the Paulista hermit monks have crafted their wines for centuries, protected by a papal bull from 1397 that exempted them from taxes due to the significance of their production, which, according to archaeological evidence, could even date back to Phoenician times.
In the glass, it displays a brilliant ruby ??color with medium-intensity violet reflections, hinting at a character full of subtlety. The nose offers intense aromas of wild red berries accompanied by delicate notes of undergrowth and leather, nuances that reflect its authentic and wild origin. Its entry on the palate is fresh and precise, immediately revealing enticing flavors of fresh pomegranate and forest fruits, intertwined with a vibrant acidity that highlights its freshness. Its elegant and complex texture unfolds with finesse, culminating in a long and harmonious finish, with refined, firm, and present tannins that ensure its longevity.
Os Paulistas Tinto represents the revival of a more authentic Alentejo, free from artifice and excessive modernism, where tradition, purity, and historical essence prevail. Aged for 18 months in used French oak barrels, it is a wine that sincerely expresses the exceptional terroir and the ancient legacy of Chão dos Eremitas. An excellent companion to slow-cooked meats and oily fish prepared with complex recipes, it offers in each glass a sensory journey through the Alentejo's winemaking heritage, inviting you to rediscover wine in its most genuine expression.
