Description
Dominó Colar is a red wine crafted by Vitor Claro and Rita Ferreira from grapes of the Castelao, Caladoc, Malvasia, and Fernao Pires varieties grown in the Sintra region, near Lisbon, Portugal. This wine, as its name suggests, brings to mind the wines of Colares due to its Atlantic and saline character. The soils are clayey, facing the west, located just 500 meters from Adraga Beach, and cultivated under a strong maritime influence. Harvesting takes place early, in early September, with the white grapes undergoing foot treading fermentation. The red varieties are fermented with whole clusters, macerated for four days, and then pressed. Vinification occurs in stainless steel, and the wine is subsequently racked into concrete tanks for refinement before being bottled the following June after the harvest. It's a red wine of remarkable finesse and freshness that borders on the natural side due to the vineyard cultivation methods and the minimal intervention in the winemaking process.
