El Serbal Wines is the personal project of Adrián Alonso Camarero, a wine lover (he spends a lot of euros on drinking the best wines of the world) who has invested in the family vineyards located in Arlzana (Burgos) and is in the process of recovering the old vines in the area. Right now, between owned and rented vineyards, he has about 6 hectares, all old vines between 80-110 years old in the towns of Covarrubias, Retuerta and Quintanilla del Agua. In many cases, these are vineyards that were abandoned and which he has been recovering for some years and others since 2023, so the number of bottles increases annually as the production of the vines increases. Right now he has around 23 different plots, the vines are multi-varietal with a higher percentage of Tempranillo and Garnacha and Viura. El Serbal is the entry-level or, rather, village wine. It comes from different plots of old, dry-land vines over 80 years old in a mountain enclave, surrounded by cherry trees, almond trees and forests, at altitudes above 950 meters. Goblet formation. Sandy-loam soils with low organic matter content and coarse elements on the surface. Different orientations depending on the plot. Destemmed grapes with a small percentage of crushed grapes. Malolactic fermentation in used barrels of various sizes where the subsequent aging takes place for 13 months. Bottled without clarifying or filtering.
