Pablo Calatayud, from his Celler del Roure in the Alforins region (Valencia), has once again created another surprising work of art and expanded his collection of Maduresa, Safrá, Prunes, and other varieties. The Pebrella captures the essence of two special plots of very calcareous soil, one with a more sandy texture (arcos) and the other with a more clayey texture (forcallà). They produce wines in old stone vats with a large amount of whole bunches, and they age in demijohns and clay jars. This wine has a very mineral, spicy nose, with dried flowers and very delicate fruit. Fine and elegant tannins, fluid yet intense. The Ferrero i Senís collection seeks to explore another shore, the most subtle, the finest, and most elegant Mediterranean. This is achieved with varieties that have been almost abandoned because they produce little color and low alcohol content, and because they are very late-ripening. Ferrero i Senís is part of the Celler del Roure team, and it's a tribute to all those who work every day caring for the vineyards and wines and rarely appear in photos. Only 4,300 bottles.
