The grapes come from a plot in Nieva, in the province of Segovia. The vineyard was planted in 1999 on a soil of silt and black clay and a subsoil of grey slate. The cultivated surface is 0.81 Ha. It is always destemmed to obtain the maximum fruitiness of this noble varietal. Strong aeration is carried out at the beginning of alcoholic fermentation and, in the second stage, the cap is gently immersed with hands and feet, so as not to break the skins and not extract vegetal touches.
