In the cellar, the only non-wine element that is used is sulphurous (and in small doses), it is not macerated too much, nor is it extracted too much, since it tries to find finesse over grip.
We have known the project since its inception, and we found a positive evolution in search of that finesse. Highly recommended.
The wine ferments in dornas (vats) and is then aged in stainless steel and used French oak barrels for 18 months. Very small production.
