Ponce Depaula es un monovarietal de Monastrell de viñas viejas (más de medio siglo de edad) en las parcelas de El Santo, La Sierra, Las Carretas y Los Almendros, de suelos arcilloso-calcáreos. Vinificado con levadura indígena y mínima adición de sulfuroso, el vino tiene una crianza justa de 6 meses en barrica de 600 litros de roble francés. Embotellado sin clarificar ni filtrar.
