Rufián es el nombre de este vino y la uva procede del municipio de Miranda del Castañar, provincia de Salamanca. La viña se plantó en 1951 sobre un suelo de granito descompuesto y una a floración de pizarra, en una parcela CLOS. La superficie cultivada es de 1.16 Ha.
Este varietal es hermano de la Pinot Noir, uva con poco color, buena acidez y muy floral. Es la uva más sutil de todas las que elaboramos y, por eso, no se utilizan bombas para remontados: solo se trabaja para ayudar a la fermentación alcohólica, haciendo pillage con las manos y los pies.
Con una densidad de 1020, la pasta se prensa y el vino resultante se baja a barrica borgoñona para su crianza, siendo la más corta de nuestros vinos con 9/10 meses en barrica.
La producción es de de 2/3 barricas al año.
