Ainda Palhete is a palhete wine crafted by Antonio Madeira in the Dão region of Portugal. Palhete wines are village wines made with a blend of varieties as they are found in the vineyard.
This wine is characterized by being a co-fermentation of 75% red grapes and 25% white grapes. The grapes come from small farmers, from vineyards aged between 60 and 100 years, where around 40 varieties of red and white grapes are mixed.
Vinification, aging, and bottling are carried out naturally, without the use of any oenological products, except for a small dose of sulfites. The vinification process is based on natural methods aimed at expressing the terroir and climatic conditions of the year. Alcoholic fermentation occurs naturally in a lagar, with indigenous yeasts. Malolactic fermentation is also carried out. The wine ages for 9 months in stainless steel tanks. It is bottled in June 2023 without clarification or filtration, to preserve the salinity, gustatory characteristics, and its ability to evolve in the bottle.
