Kevin Bouillet opened his own estate in 2018. The young winemaker learned his skills with Evelyne and Pascal Clairet of Domaine de la Tournelle before creating his own winery. In 2018, he took over some family plots, which he supplemented with vineyards from retired farmers. All this to obtain a total of 4 hectares in Pupillin, near Arbois. Since the creation of his farm he opted for organic farming. In typical Jura terroirs, such as the Jurassic limestones and the blue and gray marls characteristic of the region, he grows the five emblematic Jura grape varieties. His goal is to create original natural wines while preserving the true essence of the Pupillin terroir and the identity of the Jura.
