Bendito Destino El Olmar 2021

Bendito Destino El Olmar is a red wine made by Terry Kandylis with the Tempranillo variety from a vineyard planted more than 80 years ago with an altitude of more than 930 meters above sea level. It is located in the Peñafiel area (Valladolid).

This wine is inspired by a technique from the Italian Mascarello wine, where instead of making plots, valleys are made. In the Olmar Valley there are four proprietary plots, planted between 1920 and 1930.

The first plot ferments in a concrete egg and from there, a new plot is introduced every four days. Each discharge feeds the dough from the previous plot that is fermenting. It was fermented for 55 days with 60% stems and aged for 16 months in two 228-liter dual-use barrels from the MAdama Bize Leroy winery.
