Santenay is Cote dOr although it is not one of the most prestigious AOC. We find it especially interesting for Paul Pillot, because this wine is an excellent red wine that gives us the measure of what Thierry can do with the vineyard and the winery. The origins of Domaine Paul Pillot date back to the second half of the 19th century, when Jean Baptiste Pillot combines his work as a cooper with that of winemaker. Today, in the 21st century, it is Thierry, great-grandson of Jean Baptiste, who takes the reins of the Domaine that bears the name of Paul Pillot, his father. Thierry, thirty years old, is helped by his little sister Chrystelle. Paul Pillot's style is that of absolute respect for the grape, which in his wines is never masked by wood (ironic if we think that the origin of the winery is that of a cooper). The wines are aged in French oak barrels, a percentage of which is new and ranges from 20 or 25% of the simplest wines to a maximum of 50% for Premier Cru in the largest vintages.
