The third vintage of San Cobate is already in Coalla. One year, 2018, which we can describe as excellent for growing vines in Gumiel del Mercado, in the heart of Ribera del Duero.
A snowy winter was followed by a spring that allowed the soils to maintain a good reserve of water that the vineyard was able to take advantage of in a summer that was hot but with cool nights. The sprouting was late and the harvest, very healthy and of exceptional quality, began on September 26, with all the wickers to make a great wine like San Cobate La Finca 2018.
To understand what San Cobate is, you have to go to Burgos. There, in Gumiel del Mercado, there are four areas located between 830 and 910 meters of altitude. The four zones have slightly different soils, from clayey-calcareous to limestone-stony, with different orientations, which allows San Cobate to make a wine that is not only very complete but also of great finesse.
It is harvested manually in boxes of 15 kilos, bunches are selected before destemming and fermented in cement. The aging is in used barrels and wooden vats so as not to mask a very high quality fruit like the one from 2018. Because a great wine does not need makeup and must be a reflection of its landscape and of the people who turn that landscape into wine. our glasses.
