The Fabio Coullet Winery is a project marked by the personality of the Axarquía region in Malaga, where they work with native varieties with numerous differentiating nuances provided by the orography of the land, the different exposures of the plots and the prevailing warm and sweet climate. in the region. It is part of the Sierras de Málaga denomination of origin and is worked with minimal intervention in the winery as an extension of organic and sustainable viticulture. Decomposing slate soils and steep slopes are the denominator of the area. Varieties such as Pedro Ximenez, Moscatel or Garnacha are easily found in the area.
The Romé variety is practically extinct and there are barely 5 hectares in the whole world!!! It is grown in glass in a single plot. With minimal intervention, the grapes are destemmed and whole grain vatted in stainless steel tanks to macerate with their skins for 9 days at a controlled temperature, after fermentation they are pressed and transferred to French oak barrels where they carry out malolactic fermentation and It is refined for 13 months, without cold treatments or microfiltration.
It is a very low layer wine with a lot of freshness in the mouth, good acidity and present tannins rounded by the wood.
