El Esquilón is a plot of just one hectare, located 550 meters above sea level and planted with Listan Negro and Tintilla. The volcanic bedrock confers its minerality. The grapes are destemmed and fermented with native yeast with manual punching. After fermentation, the wine macerates for a further ten days, after which it is aged for a minimum of 10 months and then bottled without filtering. Due to the small size of the plot and the low yields, it is a wine with a very low production.
