Bodegas Toro Albalá has been making high-quality vinegars in Moriles for decades, using its fine wines, with high acetoin content and great aromatic complexity, as a base to make vinegars like this balsamic to which they add must of the Pedro Ximenez variety. The aging is long, in Castilian oak barrels. It is a complex, unctuous, dark balsamic, with an attractive contrast between sweet and acid and a bitterness balanced by the taste and aroma of raisined fruits.
