Description
El Vinagre de Vino Tinto de Banyuls realiza una fermentación y transformación acética en barricas de roble que pasan un año bajo el sol del Pirineo francés. El resultado es un vinagre muy diferente a los vinagres a los que estamos acostumbrados en España, donde el gran vinagre es de Jerez, muy viejo y de gran potencia. Aquí estamos ante una sinfonía de frutas rojas bellamente ácidas, que da un color inesperado a muchos platos. La Guinelle es el nombre de una hacienda situada en el pequeño enclave de Cosprons, a apenas unos kilómetros de la frontera con nuestro país. Allí, Nathalie Lefort compró esta propiedad en 1999 y la convierte en una vinagrería artesanal. Comienza con un Vinagre de vino tinto de Banyuls al que pronto le suceden una montonera de variedades, experimentos que llegan para quedarse o para no volver... dinamismo vinagrero en estado puro.
