Lentil caviar is also known as beluga, due to its dry resemblance to the roe of that sturgeon. It is very small in size, very thin and glued skin. Although it works well in a stew, it is ideal for soups or salads, due to its color and size. It needs between 2 and 8 hours to pre-soak and to cook, in a pressure cooker, between 25 and 40 minutes, in a casserole between 1 hour and 1 hour 40.
