The Castilian chickpea or chickpea from Zamora has a mild flavor and its skin is almost priceless. Slightly wrinkled and dark in color. The ideal soaking time is 10 to 12 hours and for cooking, in a pressure cooker between 55 and 65 minutes, in a casserole, between 2 and 3 and a half hours.
