Valdespino's Palo Cortado Viejo CP takes its name CP from the initials of Calle Ponce, where Valdespino acquired a winery in the 1960s. The winery was in very poor condition and the new ownership moved the wines to a modern winery on the outskirts of Jerez at the beginning of the last decade. This Palo Cortado comes from the finest butts from the ninth criadera of Inocente and the Tio Diego amontillado. This wine headed up to 18 degrees and entered the scale of 4 criaderas and a solera that makes up this Palo Cortado. It is a wine from the old school, from the best payment in Jerez (Macharnudo) and with wine that comes from fermented musts in casks. Their estimated median age is 20 to 25 years. In addition to CP bottlings, this solera is used to drizzle Palo Cortado Cardenal, one of Valdespino's old wines.
