Description
WILLIAMS & HUMBERT Amontillado CRUJIA is a wine made by Paola Medina with the Palomino variety at the Jerezana Williams & Humbert winery. Unlike traditional Jerez wines, aged through the “Solera y Criaderas” system, these vintage wines are aged statically. For its production, musts that come from old vines of the Pagos de Añina and/or Carrascal are selected, which are fortified at 15º for biological aging, or at 18º for oxidative aging. These wines are monitored during their aging, in which no intervention is carried out until the moment of selection for bottling. Faced with the homogeneity provided by the Criaderas and Soleras System, in which wines of different ages are methodically blended, each of these wines are unique and special. Wines that are the reflection of the vintage of the year and its particular weather conditions, as well as the peculiar evolution of each one of them during their static aging. During the harvest, a selection of bud musts is made. After controlled fermentation and subsequent decantation of the lees, this must is fortified at 15.5º, and biological aging begins spontaneously. For this Amontillado, a second fortification at 18º has not been carried out, this wine acquiring its graduation due to exhaustion of the biological aging and concentration, for which reason it has been "amontillado" naturally. 140 years contemplate the history of Williams & Humbert, owned by the Medina family, Paola Medina is the visible head of the elaborations and the one who has placed the wines of the winery at high levels of quality within the Marco de Jerez. A specialist in static aging and vintage wines, Paola leads the Sherry Revolution, which along with other young winemakers and oenologists from the area, have breathed an air of modernity into the denomination.
