WILLIAMS & HUMBERT Palo Cortado is a wine made by Paola Medina with the Palomino variety at the Jerezana Williams & Humbert winery. The vintage project is based on selecting musts that come from old vineyards of the Pagos de Añina and Carrascal, which is fortified at 15º or 18º and left untouched to study where they evolve, spontaneously developing biological aging or aging oxidative, unlike traditional sherry wines, the aging system is not "Solera y Criaderas", it is an exception since it is a static aging wine, that is to say that in the vintage of the corresponding year, yolk must was selected , which became alcoholic and over time spontaneously due to the presence of flor yeasts in the environment, the flor veil developed naturally and in the case that the flor did not develop, oxidative aging began. The Palo Cortado de Añada is a vintage sherry, being the type of oxidative aging with the peculiarity of being a static aging wine. But in this case, unlike traditional sherries, the aging system is not "Solera y Criaderas", that is to say that in the harvest, spontaneously fermented yolk must was selected, which was alcoholic at 18% vol. approx. and it has been left to age through physical-chemical aging, via wastage in American oak casks. Specifically, from the set made up of 24 vessels, a special bottling of a selection of butts has been carried out, highlighting its exceptional finesse, showing the fullness of the albariza. 140 years contemplate the history of Williams & Humbert, owned by the Medina family, Paola Medina is the visible head of the elaborations and the one who has placed the wines of the winery at high levels of quality within the Marco de Jerez. A specialist in static aging and vintage wines, Paola leads the Sherry Revolution, which along with other young winemakers and oenologists from the area, have breathed an air of modernity into the denomination.
