It combines the best of biological aging and oxidative aging. It is a complex, singular and unique wine in the world. Naturally, the aged finos finish their biological aging and begin oxidative aging, for the necessary years, to achieve the quality and roundness that mark the amontillados. Aging between 20-25 years.
