Palomino Fino from vines that grow on albariza soils located in Gibalbin and Santa Lucía, in Jerez Superior. They are 30-year-old vines that, being located indoors, produce grapes with good maturation. The aging time of this amontillado is 8 years under fast flower. Once the biological aging is completed, the wine is fortified with vinic alcohol up to 18º and enters an oxidative aging system for 6 years. The entire aging process in American oak Jerez boots. In the glass we love its color, amber as usual, very clean and intense in aromas. It leaves us with a long and tasty memory, which goes from an aperitif with toasted almonds, to light spoon dishes or fish. Also to drink alone, at a cellar room temperature.
