They are 30-year-old vines that, being located indoors, produce grapes with good maturation. The aging time of this amontillado is 8 years under fast flower. Once the biological aging is completed, the wine is fortified with vinic alcohol up to 18º and enters an oxidative aging system for 6 years. The entire aging process in American oak Jerez boots.
