Bodegas Hidalgo La Gitana
In the Bodegas Hidalgo they harvest the Palomino Fino at the beginning of September when the grape is fully ripe and, without exerting pressure on it, they obtain the must that gives rise to this Palo Cortado. It is raised and aged in American oak casks with the traditional system of criaderas and soleras. Like all the DO Jerez-Xérès-Sherry wines with the surname VOS ("Vinum Optimum Signatum"), it has an average age of over 20 years, and is imprinted with the characteristics given by time and the wood where it rests. It is dry and smooth, with fine toasted aromas and flavors.
