"La Bota de Fino 135 ""Chiclana"" is a fortified wine made by Equipo Navazos using the Palomino variety in vineyards in Chiclana de la Frontera, in the Marco de Jerez, Spain.Born from a small solera worked with patience and criteria together with Chano Aragón and with the oenological involvement of Eduardo Ojeda, this Fino clearly captures the Atlantic pulse of Chiclana: sharp and vertical profile, powerful and elegant, which blindly could touch the salinity of an authentic manzanilla, although it maintains its own and differentiated signature. It has been bottled practically en rama, with a very light filtering to preserve colour and character, offering a lively and complex mouthfeel, and a capacity for prolonged enjoyment with careful storage. The average age is around seven and a half years of aging, and it is recommended to serve between 8–9 ºC for lightness or 11–12 ºC to display its aromatic amplitude. On the table it is extraordinarily versatile: Iberian ham, seafood stews, octopus a feira, grilled vegetables or cheeses that are not excessively cured, among other harmonies; It is also a saca limited to 3,000 bottles that vindicates the authenticity of the fino Chiclanero."
