La Bota de Amontillado 128 ""Magnum"" is a wine made from Pedro Ximénez grapes in the Altos de Moriles, Córdoba, in the historic region of Montilla. This amontillado is an example of Andalusian tradition, initially aged as fino for 7 or 8 years before continuing with oxidative aging, giving it an average age of around 18 years.This magnum is the third amontillado in the series, completing a journey through the fresh wines of the three great Andalusian cities: Sanlúcar de Barrameda, Jerez de la Frontera, and Montilla. With a limited production of just over six hundred 1500ml bottles, this amontillado reflects the uniqueness of the Cordoban albariza soils, with a low alcohol content and remarkable freshness on the palate, as it was never fortified.Recommended to be enjoyed in a wide glass and served at a temperature of 12/13ºC, it is perfect as an aperitif. It pairs beautifully with iodine-rich seafood such as oysters and red prawns, as well as with spiced Southeast Asian dishes.
