Menuda historia la del Tío Mateo. Empeño personal de José Estévez por comercializarlo como "vino sin histaminas" gracias a un proceso desarrollado por microbiólogos, se topó con el rechazo institucional y sólo 15 años después el Tribunal Supremo le dio la razón, con el propio José Estévez ya fallecido. Es entonces (circa 2010) cuando se plantea reintroducir el Fino a imagen y semejanza de lo que es La Guita en Sanlucar: en este caso un fino de crianza oxidativa media (entre 4 y 5 años) que intenta mostrar el suelo por encima de la crianza.
