Hemos seleccionado el vino de las mejores paseras cordobesas, lo hemos fermentado y criado en las típicas tinajas de barro montillanas durante un año para, posteriormente, hacerle una ligera filtración, que no le restara ningún atributo.

Description
Fuera de lo que son las botas numeradas de Equipo Navazos, y llevados por la inquietud de Coalla, se buscó un PX de añada, al que se le dio el nombre de Casa del Inca. La Casa del Inca, en Montilla, es la antigua residencia del inca Garcilaso de la Vega, donde escribió la gran parte de su obra. Tras su restauración, su uso está vinculado a la tradición bodeguera de la ciudad. Casa del Inca es un Pedro Ximénez de añada, es decir, no es fruto de la tradicional elaboración andaluza de criaderas. Hemos seleccionado el vino de las mejores paseras cordobesas, lo hemos fermentado y criado en las típicas tinajas de barro montillanas durante un año para, posteriormente, hacerle una ligera filtración, que no le restara ningún atributo. Embotellado, y reposado durante unos meses, tenemos el producto terminado. Todo esto ha sido posible a la estrecha colaboración de las bodegas Pérez Barquero que nos han prestado todos los medios técnicos posibles, así como la nariz experimentada de dos de los mejores conocedores de los vinos tradicionales andaluces, los cuales nos han ayudado a catar y darle forma a nuestro proyecto
