La Bota 121 Palo Cortado Sanlucar is a fortified wine made with Palomino Fino by Equipo Navazos in Sanlúcar de Barrameda, Andalusia, Spain.This exceptional wine comes entirely from a single vintage in an ancient vineyard, composed of two adjacent plots, one with over 50 years and the other with over 80 years. It is a young and extremely refined Palo Cortado, resulting from a careful selection of the best grapes from the 2010 harvest in Pago Miraflores La Baja, the same location that gives rise to all the editions of La Bota de Florpower in their variations of white wine, manzanilla, and palo cortado. It has been aged in sherry casks and Bordeaux oak barrels filled to the brim to avoid any excess oxidation. On this occasion, we have chosen the balance and delicacy of several 225-liter barrels, which are siblings of those that originated the edition number 75.This wine predominantly exhibits an oxidative character, with only a slight and almost unavoidable natural exposure to biological aging in the tanks where the must awaited the moment of fortification to 17.5% alcohol before being transferred to the aging barrels. It has been thrilling to discover that, even in the almost complete absence of the flor veil, the distinctive mineral essence of the coastal terroir of Sanlúcar is conveyed in this wine through a sensory profile reminiscent of other wines from the same origin, such as the various Sanlúcar editions of La Bota de Amontillado, La Bota de Florpower, and La Bota de Manzanilla Pasada.Despite being a Palo Cortado, its alcohol content is moderate, slightly above 18%, and the alcohol is perfectly integrated, making it difficult to identify in a blind tasting. It is a highly enjoyable and refreshing wine, while also being complex and long-lasting. It is likely to be the perfect companion for a wide variety of Oriental dishes, ranging from India to Japan, with a particular emphasis on Southeast Asia. It truly is a delightful wine that fills us with enthusiasm.
