It is recommended to put in the refrigerator 6 hours before consuming so that the texture is firmer, cut into medallions with a fine and well-sharpened knife, previously passed through hot water. Accompany with toasted bread, dried fruits such as dried apricots or dates and some chopped pistachios for the crispiness.

His Maison is located in a rural and nearby environment, where the breeding of birds is reasonable and always in the open air, ensuring a diet with non-transgenic products, corn, wheat, soy, etc., without treatment with antibiotics. Few houses of the Foie are capable of ensuring such an exhaustive control of their production.
