Description

A partir de una de las variedades tradicionales del Armagnac (Ugni Blanc) y una de las variedades fantasma (porque casi no se usa ya), llamada Plant de Graisse, el Domaine de Aurensan elabora su Armagnac de 15 años, siguiendo la filosofía Triple Zero: Cero levaduras añadidas, Cero azufre, Cero colorantes. Nos encontramos así ante un Armagnac de familia, elaborado artesanalmente, sin concesiones de ningún tipo. Sólo mosto de uva de las variedades más expresivas, destilado de la forma tradicional (continua) para extraer el mayor volumen posible de compuestos aromáticos de la mayor pureza. No es en vano que Caroline Rozès, hoy una parte fundamental del Domaine d'Aurensan, trabajase durante una década en la industria perfumista parisina.
