This ephemeral Cuvée is made with grapes from different plots of Montgueux. The area is halfway between the Côte des Bar and the Côte de Sézanne next to the mythical city of Troyes. Blanc de Blancs 100% Chardonnay that indicates the potential of the area. Emmanuel Lassaigne continues his crusade of making Champagnes from organic vineyard management, low levels of sulfur addition, without filtration, and with native yeasts. A unique Terroir at the level of the large towns of the Cote des Blancs, which shows a precise nose, of citrus and creamy notes with a crisp, mineral and refreshing mouthfeel. The texture, as in all their wines, is complex and the low pressure and good integration of its bubble make it a very versatile Champagne. Fantastic option for a start to lunch, with shellfish, grilled fatty fish or spicy Asian food. Due to its profile, it is capable of cleaning and preparing the mouth for spicy, acidic and sharp dishes.
