Fafan Ganevat, as his close friends call him, is a true alchemist who drives you crazy with more than forty cuvées he makes every year. A vigneron whose religion is biodynamics and natural wines. A tiny Domaine in the village of La Combe de Rotailer where he manages approximately eight hectares. Trained in Chassagne Montrachet with Jean Marc Morey, he took over the family property in 1998, later joined by his sister Anne. He is a perfectionist and for what most would be maddening, he makes it everyday. He barely uses sulfur and there is always a fear that the wines will spoil during transport, but he completely avoids this by aging on the lees for long periods of time, even up to 11 years. His wines lack the traditional Jura oxidation and he prefers the Burgundian style of lightness and elegance. They are from another world.


Few domains in the Loire Valley are as legendary as Clos Rougeard, run by brothers Charly and Nadi Foucault. It is the eighth generation that cultivates its vineyards in Chacé, within the Saumur-Champigny appellation. They boast of not having changed anything and that is why they are revolutionaries. The Foucaults have always remained exactly the same, treating their four magnificent wines, "Clos Rougeard", "Les Poyeux", "Le Bourg" and "Brézé" with an almost Burgundian intensity and focus as they have for generations. "Clos Rougeard" is a mixture of several emblematic terroirs. "Les Poyeux" and "Le Bourg" are two parcels, and their Saumur blanc comes from the village of Brézé. Its ten hectares are planted with Cabernet Franc and only one with Chenin Blanc. They always cultivated naturally and applying biodynamic practices. The soils are shallow and rocky with very low yields.
