At La Polar they have been kicking the rollers for more than forty years in search of the best pieces of fish, always fresh and in season, to can immediately and keep their properties and flavor intact. After a fire in the 80s that ended in tragedy with a cold room full of product made ashes, they decide to reinvent themselves and stop freezing the bonito. A decision that improves its quality and consolidates the artisan and manual way of working.
